SOURDOUGH HOTCAKES

1 cup warm milk (Allow milk to set out and sour over night.)
1 teaspoon salt
1 tablespoon sugar
1 teaspoon soda
2 eggs
3 tablespoons vegetable shortening, melted
Use all but ½ cup of starter.
1 teaspoon salt
1 teaspoon soda
1 cup flour

Beat milk, salt, sugar, soda, eggs, and shortening together. Add starter dough and flour. Beat together. Transfer pancake batter into a small pitcher. Pour a portion of the dough out onto a hot griddle to obtain the desired size pancake. Bake pancake until several of the bubbles that form on the top break but do not fill back up with batter. Flip the pancake and brown on the other side.

Serve hot with butter and syrup.
