| FAST HAMBURGER AND CORN SOUP 1 pound lean ground hamburger 1 medium onion, chopped into ¼ inch pieces 2 - 2 ½ cups red potato with peel, cubed into ¼ inch pieces 2 ½ cups water or you can use chicken or beef broth 1 (14.5 oz.) can chopped tomatoes 1 (4 oz.) can diced green chiles, mild 1 (14.75 oz) can creamed corn ½ teaspoon salt Brown hamburger and onion together in a 4 quart saucepan. Scrub potatoes but do not peel. Slice into small ¼ inch cubes. Add potatoes and water or broth to hamburger mixture then bring to a boil. Cover and cook over medium heat for 15-20 minutes or until potatoes are tender. Add tomatoes, chiles, creamed corn and salt. Simmer for 10 more minutes, stirring occasionally to keep from sticking. Serve immediately. Serves 8 |
