CABBAGE & HAM SOUP

In a 4-quart saucepan prepare the following:

1 medium head cabbage, chopped into 1 inch pieces.
1 large onion, chopped ¼ inch pieces
1 carrot, diced into ¼ inch pieces.
Water, enough to just cover vegetables
1 teaspoon salt
½ teaspoon black pepper
1 cup chopped ham or bacon
½ cup butter


Bring all ingredients except ham and butter to a boil and then
turn the heat down and simmer until vegetables are tender-about 30 minutes.

Thicken soup: Mix ¼ cup flour with 1 cup water until all the lumps have dissolved.
Drizzle mixture into boiling vegetables a little at a time, stirring constantly until
soup has thickened. This usually takes two to three minutes.

Add butter or margarine and ham or bacon meat.
Simmer for about 5 minutes then serve.
Serve 6-8
