| POTATO SALAD 6 cooked and peeled potatoes, coarsely mashed with a fork or potato masher 1 large or 2 medium onions, ground or chopped fine 2 dill pickles, chopped fine 1 cup celery, chopped fine 1 teaspoon fresh dill, chopped fine 4 boiled eggs, chopped fine 1 cup mayonnaise ½ teaspoon salt ¼ teaspoon lemon pepper 2 teaspoons yellow mustard ½ cup buttermilk ½ cup Ranch dressing Combine potatoes, onion, pickles, celery, dill and eggs. Beat remaining ingredients together then stir into vegetables. Add more buttermilk if salad appears dry. Sprinkle paprika and chopped parsley over the top to garnish. Chill and serve. |
