PINEAPPLE LIME CHEESE JELLO

2 packages lemon or lime Jell-o
1 can pineapple, crushed
1 cup cheddar cheese, grated
1\2 pint whipped cream
1 cup miniature marshmallows
1 (15 oz.) can mandarin oranges or fruit cocktail
1 1/2 cups boiling water

In a two quart saucepan, brin water to a full rolling boil. Add Jell-o and stir until thoroughly dissolved. Into a small container, drain juice from fruit. Return 1 cup fruit juice to drained fruit.

Pour mixture into a bowl, cover and set in the refrigerator to cool. Chill until set.

One the Jell-o has set, break into small pieces with a fork. Stir in cheese and whipped cream. For variety you can also add cottage cheese.
