| YELLOW RICE 1 onion, diced into ¼ inch pieces 1 cup ham, cubed into ¼ inch pieces ¼ cup butter 2 cups chicken broth 2 cups rice, uncooked 4 cups water 1 teaspoon salt ½ teaspoon garlic powder ½ teaspoon powdered turmeric, scant (This makes the rice yellow.) Sauté onion and ham in butter in a large fry pan on medium high for 3 minutes. Add uncooked rice and stir for one minute more. Pour chicken broth over rice and add water, salt and spices. Reduce heat to medium low, cover and steam for 15 minutes. If it seems dry, add more water. Turn off the burner and let pan set for 10 minutes or until all the liquid is absorbed and the rice is tender and fluffy. |
