SWEET AND SOUR PORK

¼ cup honey (less if you like less sweet)
½ cup pineapple juice
¼ cup catsup
1/3 cup apple cider vinegar
1-2 tablespoons soy sauce
2 tablespoons cornstarch
1 pound cubed pork
1 medium green pepper, sliced lengthwise into thin strips
1 medium onion, cut in half and sliced end to end into thin strips
1 small carrot, cut into julienne strips
1 red pepper or pimento, sliced lengthwise into thin strips
1 cup pineapple chunks
5 or 6 servings of steamed rice or noodles.

In a medium sauce pan, mix honey, pineapple juice, catsup, vinegar, soy sauce and cornstarch together. Bring to a boil, stirring constantly until sauce thickens. Set aside.

Brown pork in a large frying pan and cook until tender. Strain off fat. Add vegetables to the pork and cover with a lid. Allow meat and vegetables to steam together for 5 minutes, stirring occasionally. You can add a little water if it seems dry. Add pineapple chunks and sauce then simmer until heated through. Serve immediately over steamed rice or noodles.
