SCALLOPED TURKEY

3 tablespoons butter
2 cups roast turkey, diced
½ cup chopped celery
1 medium onion, chopped ¼ inch pieces
¼ cup green pepper, chopped ¼ inch pieces
1 tablespoon pimento, chopped ¼ inch pieces
¼ teaspoon salt
1 ½ cups milk
2 tablespoons flour
1 (3 oz.) container sour cream
4 large potatoes, sliced into thin ¼ inch rounds
2 cups potato chips, crushed

In a medium sized frying pan, sauté butter, celery, onion, green peppers and pimentos over medium heat. Add turkey then cover and steam for 4 minutes. In a small bowl, mix salt, milk and flour together until lumps have dissolved. Drizzle into turkey mixture. Stirring constantly, cook for one minute or until mixture thickens.

Remove pan from heat and add sour cream. Mix thoroughly. In a large casserole dish, alternate a layer of potatoes and a layer of turkey mixture, ending with the turkey mixture. Sprinkle crushed potato chips over the top. Bake 350 F for 40 minutes or until potatoes are tender. Serve immediately.
