| MEATBALLS #1 2 pounds hamburger 1 cup quick cooking oatmeal 2 eggs ¼ cup onion, minced ½ teaspoon nutmeg 2 tablespoons Worcestershire sauce Salt and pepper to taste 2 tablespoons vegetable oil, to use for frying Mix hamburger, oatmeal, eggs and spices together thoroughly. Shape into balls about the size of walnuts. In a large skillet and heat oil. Add meat balls. Using a fork, gently lift and turn the meatballs until all sides have browned . Line meat balls in a casserole dish. Sauce: 2 cans beef consume ½ teaspoon nutmeg 2 tablespoons flour Stir consume, nutmeg and flour together until all the lumps are dissolved. Cook on high heat, stirring constantly until mixture thickens. Pour over meat balls and bake 350 F for 30 minutes. Serve plain or over rice or noodles. MEATBALLS #2 1 ½ pounds hamburger 1 ½ cups bread crumbs 1 1/3 cup onions, chopped 1/3 cup milk 3 tablespoons fresh parsley, chopped or 1 tablespoon, dried ¼ teaspoon pepper 1 egg Mix ingredients together and shape into small meatballs about the size of a walnut. In a large skillet, heat oil. Add meat balls. Using a fork, gently lift and turn the meatballs until all sides have browned . Remove meatballs from skillet and drain grease. Into the same skillet, reduce heat to low and stir in: 1 pound Velveeta cheese, Mexican or regular 1 (3 oz.) can chopped green chilies 1 package taco seasoning mix ¾ cup water Simmer, stirring constantly until completely heated. Add meatballs and serve immediately with hot corn bread. |
