| HAMBURGER AND BEAN BURRITOS 1 pound hamburger ½ teaspoon cumin 1 medium onion, chopped ¼ teaspoon powdered garlic or 1 clove garlic, minced ½ teaspoon salt 1 (15 oz.) can refried beans ½ cup water 3 teaspoons vegetable oil 2 cups grated cheddar cheese (Approximately) ½ cup sour cream (optional) Hot sauce as desired. Brown hamburger and onion together and drain off fat. Add spices, refried beans and water. Cook over medium heat stirring constantly until beans have heated thoroughly. Divide meat mixture into individual portions depending on the size of your tortilla. (About ½ cup per serving for the twelve inch or larger and 2 tablespoons for the smaller eight inch size.) Spoon mixture on each tortilla and sprinkle with grated cheese. Add sour cream and hot sauce if desired. Fold opposite ends of the tortilla about one inch toward the middle, then roll the remaining sides of the shell together forming the casing for the burrito. Grill burritos in a heavy skillet with two or three teaspoons vegetable oil, turning with a fork or spatula until brown and crispy on all sides or if you are pressed for time, heat each individual burrito for 1 or 2 minutes in the microwave. To cook more than one burrito in the microwave at the same time, count two minutes for the first burrito plus one extra minute for every additional burrito you are cooking. Watch carefully. When the cheese melts the burritos are ready. These can be prepared in advance and stored in baggies one or two days in the refrigerator or freeze them until you're ready to use. Serve burritos with salsa and a green salad. |
