GROUND MEAT AND POTATO TACOS

2 medium potatoes, peeled, ground and rinsed to remove most of the starch
1 small onion, ground
1 (2 oz.) can green chilies, chopped
2 cloves garlic, crushed or ground
1 teaspoon oregano
¼ teaspoon cumin
2 cups meat stock or bullion
2 pounds roasted beef, pork, turkey or chicken, ground
½ cup tomatoes, chopped

Topping:
2 cups lettuce, shredded
1 cup cheddar cheese, shredded
1 onion, chopped ¼ inch pieces

8-10 baked corn tortilla shells

Using a food grinder or grater, grind or grate the potatoes into a strainer and rinse with cold water to remove most of the starch. Grind the remaining ingredients separately but do not rinse. In a medium sized saucepan, mix ground onions, chili peppers, potatoes, garlic, spices and meat stock together.

Cook over medium heat until potatoes and onions are tender, about 5 minutes. Add ground meat and tomatoes and fluff ingredients together with a fork. If mixture seems dry, add more meat stock. Heat mixture through until steamy hot and then spoon into a glass serving dish. To serve, fill corn tortilla with about two or three tablespoons meat mixture and top with shredded lettuce, cheese, and chopped onions.
