| FRIED RICE 2 tablespoons vegetable or olive oil ¼ cup chopped green pepper ¼ cup Peas ¼ cup onions, sliced thin ¼ cup carrots, chopped fine ¼ cup Bok Choy, cut into julienne strips ½ cup bean sprouts ¼ cup ham or fried bacon, chopped 1 teaspoon salt ½ teaspoon black pepper 5 cups cooked rice 2 eggs, beaten Stir fry finely sliced vegetables in oil until tender - about 5 minutes. Add ham, salt, pepper and cooked rice, fluffing with a fork to distribute vegetable evenly. Heat until steaming. Drizzle in beaten eggs and continue to fluff lightly, steaming until eggs have set. Serve immediately with a soy sauce as desired on the side. |
