| BAKED MACARONI AND CHEESE 1 cup macaroni, uncooked ½ teaspoon salt 1 teaspoon vegetable oil 2 eggs, beaten 1 cup cottage cheese 1 cup sour cream 1 cup Velveeta cheese cut into small pieces 1 cup sharp cheddar cheese, grated Bring 2 quarts water to a boil. Add macaroni, salt and oil. Reduce heat and boil macaroni for 8 minutes. Drain off liquid and set aside. Macaroni should still be slightly chewy. Beat eggs until frothy. Add cottage cheese, sour cream, Velveeta and cheddar cheese. Fold into macaroni until cheese is evenly distributed. Bake in 2 ½ quart casserole dish at 350 F for 45 minutes. |
