| BAKED RIBS 4-5 pounds pork or beef ribs 2 cups ketchup 1 onion, minced fine 1/3 cup brown sugar, packed 1 tablespoon Worcestershire sauce 1 tablespoon liquid hickory flavored smoke Place spare ribs in a deep, heavy pan used for baking. Turn the oven on broil and braise the ribs for four or five minutes on each side, turning over with a fork until each side has browned slightly. Pour sauce over the spare ribs. Cover pan with an oven safe lid or aluminum foil and reduce heat. Bake for two hours at 325 F. Remove the lid or foil and continue baking for one more hour or until meat has browned and pulls easily away from the bones. Baking time will vary so check frequently to be sure the meat does not scorch or dry out. |
