LEFTOVER MASHED POTATOES

1. Add 1/2 cup mashed potatoes to bread dough, doughnut dough, cake dough,or pancake batter to give it a little richer, denser texture.

2. Make Potato Patties - For each cup of mashed potatoes you can add two eggs and 1/4 cup chopped onions. Salt to taste then pour about 1/4 cup of mixture per pattie into a heated pan with a small amount of vegetable oil to keep from sticking and fry three or four minutes on each side until patties are crisp and brown and the onions, tender.

3. Place the mashed potatoes on top of hot dogs split length-wise, top with cheese and broil in the oven until the hot dog is bubbly, potatoes are hot and cheese is melted.

4. Make mashed potato salad - just add onion, chopped fine, dill weed or dill pickle, chopped fine, or sweet pickle relish, chopped celery, chopped egg, ranch dressing, a dash of mustard and salt to taste. Sprinkle with paparika to garnish then chill before serving.

6. Top individual mashed potato portions with hot chilli, grated cheese, or hamburger gravy. Heat and serve.
