| LEFTOVER CORN Make Corn Chowder - see Soup Recipes Potato & Corn Patties - Add 1/4 cup of corn per cup of mashed potatoes, Two eggs per cup of potatoes, 1/4 cup chopped onions per cup of potatoes. Salt and pepper. Spoon small amounts of mixture into hot pan and fry in vegetable oil until golden brown on each side. Make Shepherd's Pie (see recipe under Ideas for Mashed Potatoes) Make Tamale Pie - See Quick Meals Corn can be combined with green beans and peas to make Succotash. Just add cream or milk to mixed vegetables (just enough to cover) and thicken with a little flour and water to make a creamy gravy. Serve hot. Freeze small portions of left over corn to use in soups.
