| FRESH PEACH COBBLER 2 quarts peaches, peeled and sliced ½ cup brown sugar dissolved in ½ cup hot water ½ cup butter ½ cup white sugar ½ cup milk 1 teaspoon vanilla 1 cup white flour 2 teaspoons baking powder ½ teaspoon salt Topping: ½ cup brown sugar, packed and mixed with a ½ teaspoon nutmeg. Fill a 4 quart saucepan ¾ full of water. Bring water to boiling. Drop fresh peaches two or three at a time into boiling water. Scald peaches until skins crack, about 15-30 seconds then remove peach from water. Using a sharp paring knife, remove skins and pit. Slice peaches into thin wedges and line the bottom of a 9x13 inch glass casserole dish. Pare enough peaches that you have fruit enough to fill the casserole dish 2 to 2 ½ inches deep. To sweeten, pour brown sugar and water mixture evenly over the peaches. In a separate bowl, cream butter, and sugar together. Add milk and vanilla. Sift dry ingredients and add to the creamed mixture. Pour batter over fruit and spread evenly covering the top of all the peaches. Sprinkle with sugar and nutmeg mixture. Bake 350 F. for 35 to 40 minutes or until batter has browned and peaches are hot and bubbly. Serves about 10 people. |
