CHEESE CAKE

Preheat oven to 350 F.
Recipe requires one 8” round cake pan.

Crust:
1 cup white flour
1/3 cup soft butter
½ cup brown sugar, packed
½ cup walnuts, chopped

Filling:
1 (8 oz.) package cream cheese, softened
¼ cup white sugar
1 egg
2 tablespoons milk
2 tablespoons lemon juice
1 tablespoon vanilla

For the crust, mix flour, butter, sugar and walnuts together and chop with a pastry blender or two knives crisscrossed together until crumbly. Pat ½ crust mixture into pan.

. For filling, beat cream cheese, sugar, egg, milk and flavorings together with an electric mixer until light and lemon-colored. Pour filling over the top of the crust and sprinkle with remaining half of crumb mixture. Bake for 8 to 10 minutes or until filling is set.

Serve plain or with chocolate syrup or fruit pie filling spooned over the top.

Note: If you would like to loosen the cheese cake from the pan you can set the bottom of the pan in cold water. This should cause the crust to shrink and make it easier to slip out.
