APPLE FRITTERS

1 cup white flour
1 egg, well beaten
¼ cup white sugar
1 teaspoon baking powder
½ cup milk
½ teaspoon ground cinnamon
¼ teaspoon salt
3 medium sized apples, peeled, cored and chopped fine
2-3 inches vegetable oil for frying.

Glaze:
1 cup powdered sugar
milk enough to make a thin glaze - about 2 or three tablespoons
½ teaspoon vanilla

In a large bowl, beat flour, egg, sugar, baking powder, milk and spices together. Fold in Apples.

Test the oil with a small amount of batter. It should swell quickly and float to the top. Do not allow oil to get so hot it smokes. Drop batter by tablespoonfuls into two or three inches of hot oil and fry thirty to forty seconds on each side or until golden.

Beat powdered sugar, milk and vanilla together to form a thin glaze. Dip hot fritters into the glaze, coating all sides and then set on a wire rack to cool.
