| SUGAR COOKIES Preheat oven to 400 F. Recipe requires two 12x18 inch lightly greased cookie sheets. ¾ cup vegetable shortening or butter 1 cup white sugar 2 eggs 1 teaspoon vanilla 2 ½ cups white flour 1 teaspoon baking powder 1 teaspoon salt In a large bowl, cream butter, sugar, eggs and vanilla together. Combine flour, baking powder and salt and stir into creamed mixture. Mix well. Cover and chill dough until easy to handle - about one hour. Use a spatula to scrape dough out of the bowl onto a clean flat surface that has been lightly sprinkled with flour. Lightly dust the roller with flour and roll dough out to about 1/3 of an inch thick. Cut into shapes with a cookie cutter and place on a lightly greased cookie sheet. Bake 8-10 minutes or until golden around the edges but still soft on the top. Frost with any variety frosting and decorate with sprinkles or candy. Makes about 1 ½ dozen cookies. |
