SNICKER DOODLES

Preheat oven to 400 F.
Recipe requires two 12x18 inch lightly greased cookie sheets.

1 cup vegetable shortening
1 ½ cups white sugar
2 eggs
2 ¾ cups white flour
2 teaspoons cream of tartar
1 teaspoon baking soda
½ teaspoon salt
Coating: 2 tablespoons white sugar combined with 1 teaspoon cinnamon

In a large bowl, cream shortening, sugar and eggs together. Add sifted dry ingredients. Mix well. Shape into balls about the size of a walnut and roll in the mixture of sugar and cinnamon. Place balls 2 inches apart on an ungreased cookie sheet. Do not flatten.

Bake 8 to 10 minutes or until top begins to crack. Remove cookies immediately. Do not over bake.
