MOM'S WHOLE WHEAT HONEY COOKIES

Preheat oven to 350 F.
Recipe requires two 12x18 inch lightly greased cookie sheets.

1 cup vegetable shortening or margarine
1 ½ cups honey
2 eggs
2 cups applesauce
1 teaspoon vanilla
½ cup buttermilk
3 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 rounded teaspoon ground cinnamon
2 cups quick-cooking rolled oats
1 cup walnuts nuts, chopped
1 cup raisins
1 cup shredded coconut
1 (12 oz.) package chocolate chips

In a large bowl, cream shortening, honey, eggs, applesauce and vanilla. Add buttermilk. Combine dry ingredients, oatmeal included, and add to creamed mixture a little at a time until thoroughly mixed. Add nuts, raisins, coconut, and chocolate chips.

Drop by teaspoonfuls onto a greased cookie sheet and bake for about 10 minutes or until golden around the edges. Makes two dozen cookies.
