LEMON SPICE BARS

Preheat oven to 350 F.
Recipe requires one 9x13 inch lightly greased cookie sheet.

¾ cup vegetable shortening
1 1/3 cups brown sugar, packed
½ teaspoon vanilla
2 eggs
½ teaspoon lemon peel, only the yellow portion grated
2 tablespoons lemon juice
1 cup white flour
1 teaspoon baking powder
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup quick-cooking rolled oats
½ cup walnuts nuts, chopped

In a large bowl, cream shortening, sugar, vanilla, eggs, lemon peel and lemon juice together. Sift flour, baking powder and spices then stir into creamed mixture. Add oats and nuts. Mix ingredients until well blended. Using a rubber spatula, spread batter evenly onto cookie sheet keeping mixture about 1/3 of an inch thick.

Bake 20 to 25 minutes or until golden around the edges. While still hot, slice into squares then cool.
