| JELLO COOKIES Preheat oven to 350 F. Recipe requires two 12x18 inch lightly greased cookie sheets. ¾ cup vegetable shortening ¾ cup white sugar 1 (3 oz.) Jell-o gelatin, any flavor 1 teaspoon vanilla 3 eggs ¾ teaspoon baking powder 2 ¾ cups white flour ¾ teaspoon salt Fill a small bowl with ¼ cup white sugar for rolling dough balls In a large bowl, cream shortening, sugar, Jell-o, vanilla and eggs together. Add baking powder, flour and salt. Mix well. Roll dough into walnut sized balls, then roll balls in white sugar. Place on lightly greased cookie sheet and flatten the cookie dough balls to about 1/3 of an inch using the bottom of a wide cup or drinking glass. Bake for 10 minutes or until lightly golden around the edges. |
