| GINGER BREAD COOKIES Preheat oven to 375 F. Grease and flour one 12x18 inch cake pan. ½ cup sugar ½ cup light molasses ½ tablespoon vinegar In a small saucepan, bring sugar, molasses and vinegar to a boil and then set pan aside to cool. 1 beaten egg 3 cups flour 1\2 teaspoon soda 1\2 teaspoon cinnamon 1\2 teaspoon ginger 1\4 teaspoon salt In a large mixing bowl beat egg. Add cooled sugar mixture. Stir in flour and spices. Roll dough out directly in pan as even as possible to approximately 1\8 inch. Chill 1 hour then cut pattern in the dough on the pan. Lift off excess dough around pattern pieces and repeat process until all the dough is used. Place pan in preheated oven and bake 8 to 10 minutes. Allow cookies to cool slightly before removing them from the pan. Frosting: 2 egg whites, room temperature 4 cups powdered sugar 1\2 teaspoon cream of tarter Beat ingredients together until stiff. While working, keep wet towel over bowl so frosting will not set up. |
