| DIANE'S OATMEAL COOKIES 2 cups brown sugar, packed 1 cup vegetable shortening 2 eggs 1 teaspoon vanilla 1 ½ cups white flour ½ teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda 3 cups quick-cooking rolled oats In a large glass bowl, cream brown sugar and shortening together. Beat in eggs and vanilla. Sift dry ingredients and stir into egg mixture. Measure oats and mix thoroughly. Shape dough into round walnut-sized balls and roll in powdered sugar. Place balls two inches apart on a greased cookie sheet. Tamp the dough balls down with the bottom of a drinking glass dipped in powdered sugar until they are about 1/3 inch thick. Bake 350 F. for 8-10 min. Do not over bake. Cookies are done when tiny cracks appear on the top surface and they are golden around the edges. Cookies will be moist and chewy. |
