| COCONUT SUGAR COOKIES Preheat oven to 375 F. Recipe requires one lightly greased 12x18 inch cookie sheet. 2 cups white flour 1 cup butter ¾ cup white sugar ½ teaspoon baking soda ½ teaspoon cream of tartar 1 egg, well beaten 1 cup coconut ½ cup walnuts, chopped In a large bowl, cut butter into dry ingredients using a pastry blender or two butter knives crisscrossed against each other until butter resembles coarse crumbs. Stir in all at once, one beaten egg, nuts and coconut. Shape into 1" balls and place on a cookie sheet about three inches apart. Flatten dough balls to about 1/3 of an inch using the lightly floured bottom of a drinking glass. Bake 10 minutes. Makes about two dozen cookies Note: For variety, add candied citron, chocolate chips or candied cherries. This makes a very soft, rich cookie. |
