SOUTHERN PRALINES

Lightly butter about 12 inches of aluminum foil.

1 cup white sugar
1 cup brown sugar, packed
½ cup light cream
¼ teaspoon salt
2 tablespoons salted butter
1 cup pecan halves

Combine sugars, cream and salt in a large saucepan. Cook over medium heat, stirring constantly until mixture reaches the soft ball stage-when a small amount dropped into a cup of cold water forms a soft, chewy ball. Stir in butter and nuts. Continue cooking, stirring constantly for one minute.

Remove from heat. Cool 5 minutes. Beat mixture with wooden spoon until slightly thickened. Candy should be thick enough to just coat the nuts, but not so thick it loses its gloss. Drop by large spoonfuls onto buttered aluminum foil.
