PEANUT BRITTLE

Butter two 9x12” cookie sheets in advance.

2 cups sugar
1 cup light corn syrup
½ cup water
1 teaspoon butter
1 cup raw peanuts
1 teaspoon baking soda
1 teaspoon vanilla

Mix sugar, corn syrup and water in a large saucepan and boil until mixture thickens and turns golden brown. Remove from heat. Stir soda and vanilla together and add with peanuts to the syrup. Stir vigorously to distribute the soda. Candy will foam and swell. Quickly pour into buttered cookie sheets.

Candy spreads as it cools. When completely cool, break into pieces and store in tightly covered jar for up to six weeks.
