MARSHMALLOWS

1 (3 oz.) package Jell-o, any flavor
2/3 cup boiling water
1 cup white sugar
3 tablespoons light corn syrup
Powdered sugar

In a one quart saucepan, dissolve Jell-o and sugar in 2/3 cup boiling water over low heat. Blend in corn syrup. Do not boil. Pour Jell-o mixture into a glass bowl and chill until slightly thickened. Line an 8 inch square pan with wax paper that has been greased with butter or margarine.

Beat Jell-o mixture at highest speed with an electric mixer until soft
peaks form, about 5 minutes. Pour into wax paper lined pan and refrigerate over night.

Turn pan upside down on a board heavily dusted with powdered sugar. To remove the wax paper, dampen top surface of wax paper with a clean wet cloth or paper towel and let set a few minutes. Peel off paper. Dust top of marshmallow with powdered sugar. Using a sharp knife, cut into 1 inch squares. If it gets too sticky sprinkle more powdered sugar on knife or rinse knife off with hot water. Roll cut edges in powdered sugar. Makes about 6 dozen.
