CHOCOLATE TAFFY

Prepare a heavily buttered platter 8x12 inches in which to pour candy.

4 cups white sugar
1 ¼ cups water
3 tablespoons white or cider vinegar
1 cup baking cocoa
1 tablespoon butter
1 teaspoon vanilla

In a large saucepan mix all ingredients except vanilla. Stir and cook over low heat about 8 to 10 minutes or until mixture reaches the soft ball stage. (A small amount dropped into a glass of cold water forms a soft chewy ball.) Continue cooking without stirring to hard ball stage. Tip a small amount out of a spoon and back into the pan. If it spins a web-like thread it is ready.

Pour out onto a buttered platter and cool without disturbing. Once the candy has cooled only just enough to handle without burning your fingers, pull and stretch in the vanilla. Continue to pull until candy begins to harden. Shape into a rope and cut into individual sized portions.
