| RAISIN CAKE Preheat oven to 350 F. Recipe requires two greased and floured 8” loaf pans 2 cups raisins 1/3 cup butter 1 cup brown sugar, packed ½ teaspoon ground cinnamon ½ teaspoon ground nutmeg ½ teaspoon ground ginger 1 cup hot water 2 cups white flour ¼ teaspoon salt 1 teaspoon baking soda ½ cup orange juice 1 teaspoon vanilla In a large saucepan, boil raisins, butter, sugar, spices and water together for six minutes. Allow mixture to cool to room temperature. Add flour, soda and salt then mix thoroughly. Stir in vanilla and orange juice. Divide batter into two small or one large loaf pan filled 2/3 full. Bake 40-50 minutes or until cake pulls away from the sides of the pan. Serve warm, smothered with warm lemon sauce. |
