| QUICK PUDDING CAKE Preheat oven to 375 F. Recipe requires one 8 x 8” baking dish. Sauce: 1 cup brown sugar 2 cups boiling water ¼ cup butter Batter: ½ cup brown sugar, packed ½ cup milk 1 tablespoon butter, melted 1 cup white flour 1 teaspoon baking powder ½ cup raisins ½ cup walnuts nuts, chopped In a glass 8 x 8 inch baking dish, combine brown sugar, water and butter together to make the sauce. In a medium sized mixing bowl, beat sugar, milk, butter, flour and baking powder together until smooth. Fold nuts and raisins into batter. Pour batter over the sauce but do not stir. Bake 30 minutes until golden. Serve hot with ice cream or whipped cream. |
