OATMEAL CAKE

Preheat oven to 350 F.
Recipe requires one greased and floured 9 x 13 inch cake pan.

1 cup quick-cooking rolled oats
½ cup butter or margarine
1 ¼ cups boiling water
1 cup brown sugar
1 cup white sugar
2 eggs
1 ¼ cups white flour
1 teaspoon baking soda
½ teaspoon salt

In a small saucepan, combine oats, margarine and boiling water. Let stand for 20 minutes to cool. Add sugar and eggs then mix well. Sift flour, soda and salt together and combine with wet ingredients. Pour batter into cake pan. Bake for 45 minutes or until top springs back when touched lightly in the middle.

FROSTING:

½ cup margarine or butter
¾ cup white sugar
¼ cup canned milk 1 cup walnuts, chopped
1 cup shredded coconut

In a medium-sized saucepan, boil ingredients together for l minute then stir in nuts and coconut. Frost the cake while still warm then return frosted cake to the oven for 1 minute to brown tips of coconut.
