| APPLE SWIRL POUND CAKE Preheat oven to 325 F. Recipe requires one greased and floured 12-cup bunt pan. Apple Filling: 2 large apples 3 tablespoons brown sugar 1 teaspoon ground cinnamon Batter: 2 cups white sugar 1 cup vegetable oil 4 eggs ¼ cup orange juice 2 teaspoons vanilla 3 cups white flour 3 teaspoons baking powder ½ teaspoon salt Peel, core and finely chop 2 large apples. Stir in sugar and cinnamon and set filling aside. For batter, cream sugar, oil, eggs, orange juice and vanilla together. Sift flour, baking powder and salt then add all at once to the creamed mixture. Beat until smooth. Pour 1/3 of the batter into pan alternating with half apple filling mixture and ending with remaining third batter. You should have three layers of batter and two layers of apple filling. Bake for 60 minutes or until cake tests done. Cool and sprinkle with confectioners' sugar. |
