| POCKET BREAD 3 cups milk 1 tablespoon white sugar 1 tablespoon butter 1 package dry yeast ½ cup warm water 9 cups flour 1 tablespoon salt In a 2 quart saucepan, heat milk and water to lukewarm. Remove pan from heat and add yeast, sugar and butter and let stand five minutes. Sift flour and salt together in a large pan or bowl. Add wet ingredients. Mix together thoroughly. Let dough rest for 5 minutes. Pour dough out onto a clean, lightly floured surface and knead by drawing dough in from the sides and pressing it down in the middle with the palms of your hands. Knead for 10 minutes. Divide dough in half. Divide each half portion into 10 equal pieces. Knead each piece separately until smooth. Place dough balls (20 all together) on a dish cloth lined tray and cover with a second clean damp dish cloth. This will keep the dough moist and prevent it from forming a thin skin on the outside as it rises. Let balls rise in a warm area until double in bulk. Important: Preheat oven to 475 F. Turn each dough ball onto a flat surface and roll out into a circle 4 to 6 inches around and 3/16 inch thick. Thickness is important. Place 3 to 5 rounds on an ungreased cookie sheet about ½ an inch apart. Place cookie sheet in the hot oven for 5 to 6 minutes or until dough swells and forms air pockets. Immediately flip oven temperature dial to broil. Brown each pocket for ½ to 1 minute. Repeat until all the pockets are baked. When ready to use, slit pockets open and pack with any favorite filling. |
SPICY MEAT FILLING 1 pound ground beef 1 medium sized onion, chopped into ¼ inch pieces 1 jalapeño pepper, chopped into ¼ inch pieces ¼ teaspoon garlic salt or 1 clove crushed garlic ½ teaspoon chili powder 1 (16 oz) can red kidney beans and liquid 1 (3oz) can tomato sauce 1 teaspoon salt 2 cups shredded cheddar or jack cheese 2 cups lettuce, shredded 2 cups tomatoes, chopped In a large skillet, brown meat, onion, pepper, garlic and salt together. Drain off any fat. Add beans and tomato sauce. Split pockets open and pack full of meat mixture, cheese, lettuce and tomatoes. Enjoy. |
