PLUM OATMEAL BREAD

Preheat oven 350 F.
Recipe requires one greased and floured 9” loaf pan.

2 cups white flour
¾ cups white sugar
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 cup quick-cooking oats
1 cup milk
2 eggs, beaten
¼ cup vegetable oil
10 to 12 purple prunes pitted and chopped coarse to equal about 2 cups

In a large bowl, sift flour, sugar, baking powder, soda, salt and spices together. Stir in oats. In a separate bowl, beat eggs and then combine with milk and salad oil. Add to dry ingredients, stirring just until moistened. Fold in plums.

Pour batter into loaf pan. Bake for about 1 hour or until middle springs back when touched lightly and cake pulls slightly away from the sides of the pan. Cool in pan for 10 minutes. Turn out onto cooling rack. Cool completely before slicing. Makes one large loaf.
