PINEAPPLE NUT BREAD

Preheat oven to 350 F
Grease and flour one 9” or two 8” loaf pans.

2 cups white flour
½ cup white sugar
1 teaspoon baking powder
½ teaspoon salt
1 beaten egg
1 teaspoon vanilla
2 tablespoons vegetable shortening
1 teaspoon baking soda
1 cup crushed pineapple, including juice
1 cup raisins
½ cup walnuts, chopped

In a large bowl, sift flour and dry ingredients together. In a separate large bowl beat egg, vanilla, and shortening together. Dissolve soda in pineapple juice and add to wet mixture along with raisins and nuts.

Add dry ingredients and stir just until blended. Pour batter into oiled loaf pans, filling about 2/3 full and bake for 1 hour or until bread pulls slightly away from the edges of the pan or the middle springs back when touched lightly.

Makes one to two loaves depending on the size of your pan.
