PERFECT CORNMEAL BREAD

Preheat oven to 425 F.
Recipe requires one lightly-greased and floured 8” square cake pan.

1 cup flour
1 teaspoon salt
4 teaspoons baking powder
¼ cup white sugar
1 cup yellow corn meal
2 eggs
1 cup milk
1/3 cup vegetable oil

Mix flour, corn meal, salt, baking powder and sugar together in a large bowl . In a separate bowl, combine eggs, milk and oil then beat together until frothy and light colored.

Add wet ingredients all at once to dry ingredients and stir until just moistened. Bake 20 minutes or until top springs back when touched lightly.
