PANCAKES

Memorize the ingredients to this recipe. You’ll want to use it often.

Sift together:

1 cup white flour
3 teaspoons baking powder
1 teaspoon salt
2 teaspoons white sugar if desired - or to taste

Stir in all at once:

1 beaten egg
¼ cup oil
1 1/3 cups milk - or more if you like a thinner pancake

Stir just enough to dampen the flour and get out most of the larger lumps. Do not over stir as it will make the pancakes tough.

Prepare a hot griddle or large heavy pan with a little dab of oil (enough to coat the bottom of the pan) and test the heat of the grill with a couple of drops of batter. Never allow your grill to get so hot it smokes or so cool your batter doesn't swell right up when first poured on the surface.

Your pancake is ready to turn when bubbles forming on the top break without filling back up with dough. Serve with butter and hot syrup. Delicious! Makes 4-5 large pancakes.
