GRAHAM CRACKERS

½ cup evaporated milk
2 tablespoons lemon juice.
1 cup brown sugar
½ cup honey
1 cup vegetable oil
2 teaspoons vanilla
2 eggs, beaten
6 cups whole wheat flour
1 teaspoon baking soda

In a bowl or cup, mix evaporated milk and lemon juice together and set aside. In a large bowl, mix sugar, honey, oil, vanilla and eggs together. Add milk mixture. Sift 6 cups whole wheat flour together with soda and stir all at once into wet ingredients.

Divide dough into two equal parts. Place each half on a greased 12x18 inch cookie sheet and roll to 1\8 inch thickness. Use hands and rolling pin to keep edges straight and thickness even.

Prick dough with a fork over the entire surface of the crackers about ½ inch apart for each piercing until entire surface is covered with holes. Score lightly into cracker shapes. The holes made by the fork will allow steam and gas to escape and prevent the dough from bulging and bubbling up from the pan.

Bake 375 F for 10 to 15 minutes or until lightly browned. Remove from oven and cut into squares immediately.
