FLAKY BISCUITS

Preheat oven to 450 F.
Recipe requires one 12x18 inch lightly-greased cookie sheet.
2 cups flour
½ teaspoon salt
1 teaspoon baking soda
1/3 cup vegetable shortening
½ cup milk
¼ cup apple cider vinegar

In a large bowl, mix dry ingredients together then cut in shortening with a pastry blender or by crisscrossing two knives against each other until shortening is reduced to small pieces, about the size of grains of wheat.

Add milk and vinegar all at once and stir together until just wet. The less you handle the dough the more tender and flaky your biscuits will be.

Press dough out onto a clean flat surface and roll to about ¾ inch thick. Divide into biscuits by using a cookie cutter, or bottle ring. Bake 6 to 8 minutes. Makes approximately one dozen biscuits.
