Recipe requires one 9” or two 8” greased and floured loaf pans. 1 teaspoon baking soda 1 cup pitted dates 1 cup boiling water ¼ teaspoon salt ½ cup butter or margarine 1 egg 1 cup white sugar 1 teaspoon vanilla ¼ teaspoon ground cinnamon 2 cups white flour 1 teaspoon baking powder 1 cup walnuts, chopped Add baking soda and chopped dates. Remove from heat and let stand for 10 minutes. In a large bowl, mix butter, sugar, egg, spices and vanilla together. Add cooled date mixture. Stir in dry ingredients and mix thoroughly. Stir in nuts. Pour batter into greased loaf pan, filling only 2/3 full. Bake for 30 minutes at 350 F and an additional 30 minutes at 325 F or until cake is golden brown and springs back when touched lightly in the middle. Makes one large loaf or two small. |
