BRAN MUFFINS

Preheat oven to 425 F.
Recipe requires one greased 12 cup muffin pan - Paper muffin liners are optional.

1 cup sifted flour
3 ½ teaspoons baking powder
½ teaspoon salt
3 tablespoons brown sugar
1 egg, well beaten
2/3 cup milk
1 cup all-bran cereal
3 tablespoons melted butter
¼ cup raisins
¼ cup finely chopped walnuts
¼ cup dark molasses

In a large bowl, sift dry ingredients together.
In a separate bowl, combine sugar, egg and milk.
Add bran and melted butter and allow the mixture to set for five minutes.
Add dry ingredients. Stir until just moistened. Fold in nuts and raisins.
Drizzle and fold in molasses. Allow molasses to marble through the batter.
Spoon batter into greased muffin tins, filling 2/3 full.

Bake for 20 minutes or until golden. Makes 12 muffins
