| BAKING SODA PANCAKES Preheat a large griddle or sturdy, lightly greased frying pan. Pan should be hot enough to sizzle a drop of water but not so hot it begins to smoke. 2 cups white flour 1 teaspoon baking soda 3 tablespoons white sugar ¾ teaspoon salt 2 eggs, well beaten 2 cups buttermilk ¼ cup canola oil or melted butter Sift dry ingredients into a large glass bowl. Beat wet ingredients in a separate bowl then pour all at once into dry ingredients. Stir until just blended - there will be some lumps. Do not over mix or the soda looses it‘s leavening power. Pour about ¼ cup of batter onto hot griddle for each pancake. Pancakes are ready to turn when some of the bubbles that form in the center pop but do not fill back up with batter. Flip pancake and cook until both sides are golden brown. Makes 10-12 pancakes. Variations: Add 1 peeled, grated apple or ½ cup well-drained or fresh blueberries to the batter. |
