APPLESAUCE BREAD

Preheat oven to 375 F.
Recipe requires three 8” or two 9” lightly-greased loaf pans.

1 2/3 cup warm water
1/3 cup honey
1 tablespoons dry yeast
3 cups white flour
3 cups whole wheat flour
1 tablespoons salt
1 cup applesauce

In a large bowl, dissolve yeast and honey in the warm water.
Let mixture stand for ten minutes. Add applesauce.
Measure in flour and salt. Mix ingredients together and knead by pulling
dough away from the edges and pressing down with your palm in the middle.
Keep the dough soft but add more flour if it feels too sticky.

Cover and let dough rise until double in bulk. Turn out onto a clean counter
top and divide into loaves. Knead each loaf until all air bubbles are removed.
The amount of dough you use will depends on the size of your pan.
Each loaf should fill approximately ½ of the greased loaf pan.

Set pans in a warm 70-80 degree area to rise.

Cover with a clean dish towel if desired. Let rise until double in bulk.
When you touch the dough it should give slightly and leave the imprint of your finger.
Do not allow the dough to become so light that it falls or caves in when you touch it.
If this happens you must remold the loaves.

Bake for 45 minutes or until tops are golden brown.
Makes 2-3 loaves depending on the size of your pan.
